There has been a recent increase in the number of children with attention-deficit hyperactive disorder (ADHD) due to environmental hormones. The typical Japanese person consumes up to 80% of dioxins from fish and seafood. The tendency is to think that seafood is a healthier choice than meat; however, this largely depends on the size and the type of fish that you choose. The fatty parts of a large fish should not be ingested due to the dioxin and PCB content, especially since both are fat-soluble.

In Japan, the daily dietary habits have evolved since the Second World War; however, traditional Japanese meals have not changed for many generations. Japanese meals are mainly composed of cooked and smoke-dried dishes, which are a part of the healthy Japanese diet.
